Method
- Fully submerge the pork belly in a pot of water, add the salt and bring to a boil. Reduce to a simmer and cook until the pork belly is flaky and tender, 3 to 4 hours. Turn off the heat and drain.
- Heat the vegetable oil in a fryer or large pot to 350 °F. Gently place spoonfuls of the boiled pork belly into the fryer until golden brown and crispy; about 5 to 7 minutes.
- Transfer to a paper towel lined plate or bowl to drain and immediately season with salt and pepper while still hot from the oil.
- Mix the mayonnaise, mustard and honey in a bowl. Adjust amounts to your tastes.
- Spread a portion onto the bottom baguette halves. Top with tomatoes and chopped lettuce and the fried pork belly.
- Drizzle with the habanero vinegar, to taste. Finish with another heavy drizzle of the honey mustard mayonnaise.
